Sassy Sask Follow-up

So I just know you’ve been waiting with bated breath to learn what I did with those Saskatoon berries I got last week.

There were so many tasty options (thanks for the pie recipe, Elaine) and I am definitely planning on visiting the Kekuli Cafe in West Kelowna for some Saskatoon berry bread pudding (thanks for the tip, Alice).

In the meantime, I chose a really simple option that let me really taste and enjoy those berries. I poured them, raw, over a bowl of honey-laced Greek yogurt. It. Was. Divine. The whole family loved it, and each downed two bowls full. What a pairing!

The next day, with only a few berries left, I made gazpacho, which was quite nice if you like cold, fruity soup… which I’m not so sure I do.

Anyway, I didn’t take any pictures, but if you are curious enough to try it yourself, here’s the recipe:

1 cantaloupe, peeled, seeded and cut into small pieces

1 cucumber, peeled and chopped up

2 Tablespoons honey

3 teaspoons white wine vinegar

8 basil leaves

1/4 cup Saskatoon berries (or substitute blueberries)

1/4 teaspoon salt

1. In a blender, combine all ingredients until smooth.

2. Refrigerate and serve cold.

As for me, I see more honey Greek yogurt topped with fresh, ripe Saskatoons in my future.
